I imagine it was just the pun working in the comic, but there was a (controversial) announcement of scientists discovering “new” salivary glands last year. The times even uses the pun for the headline with https://www.nytimes.com/2020/10/19/health/saliva-glands-new-organs.html “Doctors May Have Found Secretive New Organs in the Center of Your Head”
